This is done through the Dynasty Menu, and specifically by navigating to the Population or Jobs sections. From there, you can select the villager of your choice and see all available jobs.

How to Assign Villager Jobs in Sengoku Dynasty
To assign villager jobs in Sengoku Dynasty, access the Dynasty Menu and navigate to the Population tab. Select the villager that you want to assign a job to and on the bottom right of their tab, select “Assign job”.
After that, a new tab will show up on the far right where you’ll all available job specializations and the Workplace where that villager will work.
Alternatively, from the Dynasty menu again, you can select the Jobs tab and manage everything from there. Both options work and it’s all about which one is more convenient for you.
The easiest way to assign a job is to have a house with a campfire. This will unlock the Cook job, which is a great starting option.
After assigning a job, you’ll need to also make sure that the villager has all the required materials available to carry out that job.
For instance, for a villager to work as a Cook, you’ll need to select an available recipe and have the required input items to complete that recipe. Similarly, for other jobs, you’ll need the available tools and storage space to place any produced items.
Also, to make sure all your villagers are employed, check the Dynasty tab in the Dynasty Menu and you’ll be able to see how many workers you have and how many unemployed villagers on the right side menu.

How to Unlock More Jobs
To unlock more jobs in Sengoku Dynasty, complete story-related activities and quests while also continuing to expand your village.
For instance, repairing the nearby bridge will unlock various jobs, and constructing certain buildings will further increase your options.
Examples include the Woodcutter’s Hut and the Carpentry Station, which allow your villagers to work as woodcutters.
